My days have been filled with so much to do since Josiah got home. Even when I’m out to work or study the whole day, I try to put something in the fridge. Here are some recipes and meals to share with you. I also hope you like the title I have set for my dishes.
Rich Spaghetti
Since we don’t have a microwave but an oven, I specifically put together this spaghetti meal for myjojo in the refrigerator so he was surprised when he got home from training and just needed to reheat the dish.
Firstly, I boiled the spaghetti. Then, I added red wine, mixed herbs, salt and olive oil to taste. Then, added some coppa lion, dried tomatoes, chives and olives onto it. I thought that was not enough so I made some omelette with only mushrooms.
There you go!
Simple Carrot Rice
I boiled the rice in its usual way. Then I boiled mushrooms and chopped carrots separately. Finally, when ready, I mixed them all together and added sesame oil, soy sauce, oyster sauce, chives, pepper and chilli flakes to taste.
Island of Omnivore
I called this “Island of Omnivore” because Omnivores eat vegetables and meat and it does look like an island with the mix of brown and green. If you can tell, the rice placed at the centre is the size of the cup I use to measure my rice. Go funky with the way you cup your rice instead of simply placing them on your plate.
I love the beef slices as they are so flat and I just quickly fry them and lift them off the pan so they don’t overcook since they are so thin. I initially marinated them with garlic and herbs (the usual). Lettuce were cooked separately with black bean sauce and finally sauce poured over the rice.
Mixed Pasta Tomato
I went crazy and decided to mix penne and spaghetti together. If you had followed my previous recipes on cooking spaghetti, it’s pretty much the same except that I added onions, pok choy (weird, I know!), spam and cheese with the tomato-based ready made sauce I bought.
It was really yummy.
Chicken Min Sin
Simple. Min Sin = thin vermicelli. I chopped the chicken thigh into small pieces and then boiled it, drained it (to get the fats floating on the water out), and then boiled it together with the thin vermicelli for a few minutes before finally adding some chilli oil and chives on top. For the taste of the soup, I used Maggi’s Chicken seasoning – I don’t always eat my Maggi together with the seasoning and I know I could use it on a separate occasion.
Overwhelming Snow Peas Dominating Minced Pork
I really do think the snow peas cooked in garlic and black soy sauce and pepper overwhelms the taste of the minced pork.
Deceiving Ice-Cream on Potterhouse Steak
That’s Durian ice-cream! Just kidding! It’s not ice-cream but avocado with sweet chilli sauce on it, next to the potterhouse steak (cooked rare) and the sauteed mushrooms, chicken breast meat and onions. Yummy.
Green Beans The Minions
I really think that the green beans (cooked with black bean sauce and garlic) look like minions trying to enter the cave of rice. For fun, I sprinkled some shredded cheese over it and let it sit for a while (while hot) so they melt over the dish. Totally recommended for vegetarians.
But lo and behold, I did have some meat in my dish (hidden at the bottom of rice). I’ve got Coppa Lion at the bottom, it tastes like proscuitto. You could also use ham, bacon or salami.
Hidden Treasure of Happiness
Here’s the winning dish of the week. Hidden Treasure of Happiness. Since avocado’s myjojo’s favourite, I hid it in his meal. I scooped half an avocado on his plate and placed it at the centre of the plate. One avocado for two persons.
Then, I cooked some onions, the spam I had from previous meal, some kidney beans with some soy sauce, paprika seasoning and pepper.
Then, after the rice is boiled, I broke an egg into the rice (for two persons) and mixed it together while it’s still very hot!
This is how it looks afterwards after I added some oregano seasoning.
Then, I cupped the rice into my favourite rice bowl and placed it over the avocado on the plate and finally put the cooked dish over the rice and “hidden avocado”.
The subject is already neatly placed in the middle, it is okay to mess the plate up with the beans, spam and onions.
Halfway through the meal, myjojo found his hidden treasure.
Oh, I just love cooking. More to discover.
My idea of good and healthy eating is to mix my food. If today’s rice, tomorrow’s noodles, next meal would be pasta, and following one would be heavier on meat.

Grace: Dish washer? I do, but I don’t use it because I would waste water with so little dishes. Cleaning up is easy actually. I don’t use that many plates / utencils. If I make rice and fry something, I wash: one big knife, chopping board, a salad dishbowl, a big pan, 2 plates, 2 glasses, some cutleries, 2 utencils, 1 rice cooker. That’s it!!!
